It never moves with the rest of the fruit; it is always placed precisely in the geometric center of the available space, regardless of whether the neighboring tangerines are stacked high or spread thin. I watch the workers clean the metal edge, wiping away dust and the faint, sharp scent of disinfectant that mixes with the underlying citrus musk. It is a perfect, unnatural centering.
